Marie's Balsamic Vinaigrette Potato Sala

- 2/3 cup Marie's Balsamic Vinaigrette Dressing
- 10 medium potatoes, diced
- ½ cup roasted red peppers, diced
- ¼ cup green onions, sliced thin
- 1 (10 oz.) can quartered artichoke hearts, drained
- 4 slices bacon
Instructions
- Cook bacon until crisp, let cool completely, crumble and set aside.
- Place potatoes in a saucepan with enough water to cover. Bring to a boil, then cook for 5-10 minute or until tender. Drain and transfer to a large bowl.
- Add the red peppers, green onions, and artichoke hearts. Drizzle with dressing and toss to coat. Chill for at least 4 hours or overnight.
- Add crumbled bacon and toss just before serving.
