    List of Ingredients


    • 2/3 cup Marie's Balsamic Vinaigrette Dressing
    • 10 medium potatoes, diced
    • ½ cup roasted red peppers, diced
    • ¼ cup green onions, sliced thin
    • 1 (10 oz.) can quartered artichoke hearts, drained
    • 4 slices bacon


    Instructions


    1. Cook bacon until crisp, let cool completely, crumble and set aside.
    2. Place potatoes in a saucepan with enough water to cover. Bring to a boil, then cook for 5-10 minute or until tender. Drain and transfer to a large bowl.
    3. Add the red peppers, green onions, and artichoke hearts. Drizzle with dressing and toss to coat. Chill for at least 4 hours or overnight.
    4. Add crumbled bacon and toss just before serving.
