Mediterranean Couscous Salad

List of Ingredients
- 3/4 cup vegetable or chicken broth
- 1 cup uncooked couscous
- 2 T olive oil
- 1 (14 oz) can quartered artichoke hearts, drained and coarsely chopped
- 1 (10 oz) can diced tomatoes and green chiles, drained
- 1/2 cup crumbled feta cheese
- 1/4 cup pine nuts, toasted
- 1/4 cup pitted kalamata olives
- 2 green onions, chopped
- 1 garlic clove, minced
- 2 T chopped fresh basil
- 2 T chopped fresh mint
- 2 T chopped fresh parsley
- romaine or baby spinach leaves (optional)
Instructions
- Bring broth to boil in a saucepan; stir in couscous. Cover, return to a boil, and remove from heat. Let stand 5 minutes. Drizzle with olive oil, and fluff with a fork. Let cool.
- Combine couscous, artichokes, and next 9 ingredients, tossing gently. Serve over lettuce or spinach, if desired.
