    Mediterranean Couscous Salad

    List of Ingredients


    • 3/4 cup vegetable or chicken broth
    • 1 cup uncooked couscous
    • 2 T olive oil
    • 1 (14 oz) can quartered artichoke hearts, drained and coarsely chopped
    • 1 (10 oz) can diced tomatoes and green chiles, drained
    • 1/2 cup crumbled feta cheese
    • 1/4 cup pine nuts, toasted
    • 1/4 cup pitted kalamata olives
    • 2 green onions, chopped
    • 1 garlic clove, minced
    • 2 T chopped fresh basil
    • 2 T chopped fresh mint
    • 2 T chopped fresh parsley
    • romaine or baby spinach leaves (optional)


    Instructions


    1. Bring broth to boil in a saucepan; stir in couscous. Cover, return to a boil, and remove from heat. Let stand 5 minutes. Drizzle with olive oil, and fluff with a fork. Let cool.
    2. Combine couscous, artichokes, and next 9 ingredients, tossing gently. Serve over lettuce or spinach, if desired.
