    This salad could also be served as an appetizer with tortilla chips.


    List of Ingredients


    • 1 (15 oz) can black beans, rinsed and drained
    • 1 (15 oz) can garbanzo beans
    • 2 cups frozen corn
    • 1/2 medium onion, diced
    • 1 T diced fresh cilantro
    • 2 diced jalapeno peppers, optional
    • 1/2 red bell pepper, diced
    • 1/4 cup olive oil
    • 3 T lime juice
    • 1 tsp ground black pepper
    • salt to taste
    • 1/2 tsp honey


    Instructions


    1. In a large bowl, combine the black beans, garbanzo beans, corn, onion, cilantro, jalapenos, bell pepper, olive oil, lime juice, pepper, salt and honey.
    2. Mix well; refrigerate and allow flavors to blend.
