    Orzo Salad with Pesto Dressing

    Recipe Introduction


    Orzo is a small rice-shaped pasta that cooks quickly and makes an easy-to-serve salad. Using prepared pesto is an easy way to provide big flavor for the dish, but you'd like to prepare your own see the Pesto Genovese recipe in the sauces category. Add the additional whole pine nuts just before serving so that they don't lose their crunch by absorbing the dressing for an extended period.


    List of Ingredients


    • 1 16-oz pkg orzo
    • 1/2 cup prepared pesto sauce
    • 2 T olive oil
    • 2 T white-wine vinegar
    • 1/4 cup toasted pine nuts


    Instructions


    1. In a large saucepan, cook orzo in boiling salted water following pkg directions; drain very well.
    2. Transfer orzo to a large bowl and stir in pesto sauce, oil, and vinegar. Cool to room temperature; refrigerate, covered, until ready to serve. Sprinkle with pine nuts just before serving.
