Orzo Salad with Pesto Dressing

- 1 16-oz pkg orzo
- 1/2 cup prepared pesto sauce
- 2 T olive oil
- 2 T white-wine vinegar
- 1/4 cup toasted pine nuts
Instructions
- In a large saucepan, cook orzo in boiling salted water following pkg directions; drain very well.
- Transfer orzo to a large bowl and stir in pesto sauce, oil, and vinegar. Cool to room temperature; refrigerate, covered, until ready to serve. Sprinkle with pine nuts just before serving.
