Pecan Rice and Feta Salad
With a flavor reminiscent of pecans, the rice in this refreshing salad grows only in Louisiana, but it's available in supermarkets in the rice section.
List of Ingredients
- 1 7-oz pkg wild pecan long-grain rice
- 4 oz feta cheese, crumbled (1 cup)
- 1/2 cup chopped green sweet pepper
- 1/2 cup chopped yellow sweet pepper
- 1/2 cup chopped onion
- 1/3 cup pine nuts or chopped pecans, toasted
- 1 2-oz jar diced pimiento, drained
- 1/4 cup olive oil or salad oil
- 2 T tarragon white vinegar or 2 T white wine vinegar plus 1/8 to 1/4 tsp dried tarragon, crushed
- 1/8 tsp pepper
- Lettuce leaves (optional)
Instructions
- Cook rice according to package directions, using 1 tsp salt as directed; cool slightly.
- In a mixing bowl combine cheese, peppers, onion, nuts and pimento; add cooled rice.
- For dressing, stir together oil, vinegar, and pepper; add to rice mixture. Toss gently to coat.
- Cover; chill for up to 24 hours. If desired, serve over lettuce.
