    Pesto Salad Dressing


    List of Ingredients


    • 2 cups packed basil leaves
    • 1/2 cup packed flat-leaf parsley
    • 1/4 cup part-skim ricotta cheese
    • 3 T grated Parmesan cheese
    • 3 garlic cloves
    • 1/2 tsp freshly ground pepper
    • 2 T plain nonfat yogurt


    Instructions


    1. In blender or food processor, combine basil, parsley, ricotta, Parmesan, garlic and pepper; puree. Transfer to small bowl with tight fitting lid; stir in yogurt.
    2. Refrigerate, covered, until flavors are blended, at least 2 hours.
    3. Stir again before serving.
