    Romaine and Cucumber Salad

    List of Ingredients


    • 1 head romaine lettuce
    • 1 cucumber
    • 6 sprigs fresh mint
    • salt and pepper, to taste
    • 1/4 cup extra-virgin olive oil
    • 2 T red wine vinegar


    Instructions


    1. Remove any of the tough outer lettuce leaves. Wash the rest, spin dry, cut the leaves into 1/2" pieces and place in a bowl. Peel the cucumber, quarter it lengthwise, cut into 1/2" pieces, and add to the romaine lettuce. Chop the mint leaves into very thin shreds and add to the salad. Sprinkle with salt and pepper, mix, drizzle with olive oil, and mix again. Add the vinegar and toss the salad. Transfer to a serving platter.


    Final Comments


    Yield: 6 to 8 servings.
