Santa Fe Rice Salad
List of Ingredients
- 1 pkg (6.9 oz) reduced-sodium chicken-flavor rice mix
- 3 T vegetable oil, divided
- 2 cups chopped cooked chicken or turkey
- 1 1/2 cups chopped tomato
- 1 cup frozen corn, or 1 can (8 oz) corn, drained
- 1/2 cup chopped red or green bell pepper
- 1/4 cup sliced green onions
- 2 to 3 T chopped cilantro
- 2/3 cup prepared salsa or picante sauce
- 2 T lemon or lime juice
Instructions
- Prepare rice mix as package directs, substituting 1 T oil for margarine. Cool 10 minutes.
- In large bowl, combine rice, chicken, tomato, corn, bell pepper, green onions and cilantro.
- Combine salsa, lemon juice and remaining 2 T oil. Pour over rice mixture; toss. Cover; chill 4 hours or overnight. Stir before serving.
