Simple Orzo Salad

- 2 cups cherry tomatoes
- 1 teaspoon salt
- 2 tablespoons olive oil
- 4 cups chicken broth
- 1 1/2 cups orzo
- 1 (15 ounce) can garbanzo beans, drained and rinsed
- 3/4 cup red onions, finely chopped
- 1 cup yellow bell peppers, diced
- 1/2 cup fresh basil, chopped
- 1 1/4 cups Brianna's Blush Wine Vinaigrette
Instructions
- Preheat oven to 400°. Toss tomatoes with olive oil and salt and spread out on a baking sheet. Roast in oven until tomatoes split open, about 20 minutes.
- Meanwhile, pour broth into a large saucepan, cover pan and bring to a boil over high heat. Stir in orzo, cover partially and cook until orzo is tender but still firm to the bite; stirring frequently, about 7 - 9 minutes.
- Drain orzo through a strainer and transfer to a large wide bowl and toss until slightly cool.
- Mix orzo with beans, onion, pepper, basil and vinaigrette.
- Gently mix in roasted tomatoes and season to taste with salt and pepper. Chill until ready to serve.
