    Need a meal that's simple and quick? You can't beat Grilled Steak Salad with Blue Cheese. Within 30 minutes you can have a wholesome and delicious low carb dinner on the table.


    List of Ingredients


    • 1/4 teaspoon lemon pepper
    • 1/4 teaspoon freshly ground pepper
    • 4 (4-ounce) Lean Ribeye Steaks (1 pound)
    • 5 cups arugula or mixed greens
    • 1 1/2 cups grape tomatoes
    • 1/2 green pepper, thinly sliced
    • 1/4 cup crumbled blue cheese
    • 1/2 cup low-fat vinaigrette


    Instructions


    1. Sprinkle lemon pepper and ground pepper over steak; set aside.

    2. Grill steak, uncovered, over medium-hot coals (350 to 400 degrees) 5 minutes on each side until desired degree of doneness. Slice.

    3. Combine arrugula, tomatoes and green pepper in a large bowl.

    4. Top with sliced steak, blue cheese and toss with vinaigrette.
