    Recipe Introduction


    This dish is reminiscent of Chinese sesame noodles - only it's a lot leaner. It can also be served hot.


    List of Ingredients


    • 5 T peanut butter
    • 1 T rice vinegar
    • 1 T water
    • 1 T plus 1 tsp reduced-sodium soy sauce
    • 1 tsp freshly squeezed lime juice
    • 1 tsp mined garlic
    • 1/8 tsp cayenne
    • 4 cups broccoli florets and thinly sliced stems (about 1 lb)
    • 8 oz whole wheat fussilli, cooked


    Instructions


    1. In a small bowl, combine the peanut butter, rice vinegar, water, soy sauce, lime juice, garlic, and cayenne. Set aside.
    2. In a medium saucepan with a steamer insert, steam the broccoli over boiling water, covered, until the broccoli is tender yet crips, 1 to 2 minutes.
    3. Combine the broccoli and cooked pasta in a medium bowl, pour the peanut sauce over the mixture, and toss. Chill in the refrigerator and serve.
