    • 1 pkg. Mission® Soft Taco Size Flour Tortillas
    • Broiled Lamb:
    • 4 Lamb Sirloin Chops 3/4 - 1" thick
    • 1/2 cup Virgin Olive Oil
    • 1 cup Cider Vinegar
    • 2 cloves Minced Garlic
    • 1 tsp. Dried Oregano
    • 2 tsp. Minced Parsley
    • 1 tsp. Crushed Coriander
    • Tomato and Cucumber Salsa:
    • 4 Large Roma Tomatoes
    • 1 Small Cucumber
    • 1 Small Onion
    • 1 Large Green Bell Pepper
    • 1 Tbsp. Lemon Juice
    • 1 Tbsp. Lime Juice
    • 2 Tbsp. Balsamic Vinegar
    • 1 tsp. Sea Salt
    • 1 cup Prepared Roasted Garlic Hummus
    • 2 cups Chopped Fresh Spinach
    • 1 cup Crumbled Feta Cheese
    • 1/2 cup Sliced Black Olives (optional)


    Instructions


    1. Combine olive oil, cider vinegar, garlic, oregano, parsley and coriander in a small bowl. Add lamb, cover and refrigerate for 6-24 hours.
    2. When done marinating, place meat on rack in the broiler pan. (3 to 4 inches from the heat). Cook 12-15 minutes turning the meat over half way through cooking time. Slice into cubes for serving.
    3. Finely chop tomatoes, cucumber, onion and green pepper. Add lemon, lime, vinegar and salt, mix together. Put in refrigerator until ready to use.
    4. Spread 1 tablespoon hummus into warmed tortilla, add 2-3 Tablespoons lamb. Garnish with spinach, cucumber salsa, feta cheese and olives.
