    Mushroom Stuffed Burgers

    Recipe Introduction


    These robust burgers are ideal for true mushroom-lovers. For a more intense mushroom taste, use full-flavored wild mushrooms, such as morels or porcinis. Otherwise, opt for crimini, portobello or shiitake mushrooms, making sure to remove the tough stems from the shiitakes before chopping them.


    List of Ingredients


    • BURGERS:
    • 1 1/2 lb ground beef chuck (80% lean)
    • 1 T soy sauce
    • 1 1/4 tsps freshly ground pepper, divided
    • 3/4 tsp salt, divided
    • 1 T butter
    • 1 T olive oil
    • 3/4 lb mushrooms, finely chopped
    • 2 T minced garlic
    • 1/4 cup sliced green onions or chives
    • 1 tsp Worcestershire sauce
    • 4 slices Swiss cheese
    • 4 large sesame hamburger buns, split
    • 4 large slices tomato
    • MAYONNAISE:
    • 1/2 cup mayonnaise
    • 2 tsps soy sauce
    • 1 tsp Dijon mystard


    Instructions


    1. In medium bowl, gently mix together beef, soy sauce, 3/4 tsp of the pepper and 1/2 tsp of the salt. Using gnerous 1/3 cup per patty, shape mixture into 8 (4 1/2-inch) patties 3/8" thick. Refrigerate while preparing stuffing.
    2. Heat large nonstick skillet over medium-high heat until hot. ADd butter and oil; heat until hot and butter is melted. ADd mushrooms; cook 2 minutes, stirring occasinally. Add garlic; cook 8 to 10 minutes or until mushrooms are browned and liquid has evaporated. Stir in green onions, Worcestershire sauce, remaining 1/2 tsp pepper and remaining 1/4 tsp salt. Cool.
    3. Mound about 1/2 cup stuffing in center of 4 patties; cover with remaining 4 patties, sealing edges by firmly pressing together with fingers. Gently press center of burgers to eliminate mounding.
    4. Heat grill. Place burgers on gass grill over medium heat or on charcoal grill 4 to 6 inches from medium coals; cover grill. Grill 10 to 12 minutes or until thoroughly cooked and no longer pink in center, turning once. Top each burger with 1 slice cheese; grill 1 minute or until cheese has melted.
    5. Meanwhile, in small bowl, whisk together all mayonnaise ingredients. Place buns on grill; grill 30 to 60 seconds or until lightly toasted. Spread each bun with 2 T mayonnaise. Top burgers with tomato.
