    Purchase coleslaw, onion rolls, cheese, and corned beef. Complete the meal with potato salad.


    List of Ingredients


    • 1 lb prepared coleslaw
    • 4 green onions, sliced
    • 6 onion rolls, cut in half
    • 1/3 cup spicy brown mustard
    • 1 lb thinly sliced lean corned beef
    • 6 (1-oz) slices Monterey Jack cheese with peppers


    Instructions


    1. Stir together coleslaw and green onions; drain and set aside.
    2. Place rolls, cut sides up, on a baking sheet. Spread with mustard. Top bottom halves of rolls with corned beef and cheese slices.
    3. Bake at 425 degrees for 5 minutes.
    4. Spoon coleslaw mixture evenly over cheese. Cover with top halves of rolls.
