    It doesn't take much to turn an everyday afternoon into something out of the ordinary. One of our favorite ideas is a picnic, under a big shady tree, for two. Invite a friend you've known for ages or someone you'd like to know better. The key, of course, is to keep it refreshingly simple. Spread the blanket, talk, relax-for once doing nothing is the whole point.


    List of Ingredients


    • 2 boneless skinless chicken breasts
    • 1/2 tsp freshly ground black pepper
    • 5 Tbsp tamari soy sauce
    • juice of 2 lemons
    • 1 small red onion, thinly sliced
    • 3 Tbsp olive oil
    • 2 garlic cloves, finely chopped
    • 2-4"x5" pieces of foccacia bread, sliced horizontally
    • 10 arugula leaves
    • Dijon mustard


    Instructions


    1. In a medium sized mixing bowl, place the chicken breasts, tamari soy sauce, lemon juice and black pepper and marinate for 10 to 30 minutes. Remove chicken breasts from bowl and set aside.
    2. In a 10" frying pan sauté the onions and garlic in 2 tablespoons of olive oil until translucent; about 5 minutes. Pour the marinade into the pan and simmer until the liquid is reduced by half. Pour reduced marinade/onion mixture into an airtight container that will accommodate the chicken breasts.
    3. In the same pan heat the remaining 1 tablespoon of olive oil and sauté the chicken breasts until browned on both sides. Cover pan and reduce heat to medium and cook until the chicken is tender; about 15 to 20 minutes. Place chicken in the container with the onion mixture.
    4. When you arrive at the picnic site, create the sandwiches. Spread the bottom halves of the foccaccia with Dijon mustard, place the arugula leaves on the mustard followed by the chicken and top with the onion mixture and foccaccia slice.

    1/2 lb. firm feta cheese, cubed
    1 green apple sliced
    1 jar of sweet gherkins or baby dill pickles
    1/4 lb. assorted olives
