    List of Ingredients


    • 1/2 medium yellow bell pepper, cut into strips
    • 1/2 medium green bell pepper, cut into strips
    • 1 small red onion, sliced
    • 2 T balsamic vinaigrette or Italian dressing
    • 1 round focaccia bread (8" in diameter)
    • 2 T chopped fresh basil leaves
    • 1/2 cup shredded mozzarella cheese
    • 2 roma tomatoes, sliced


    Instructions


    1. Spray 8 or 10 inch skillet with cooking spray; heat over medium-high heat. Cook bell peppers, onion and vinaigrette in skillet 4 to 5 minutes, stirring occasionally, until peppers are crisp-tender; remove from heat.
    2. Cut focaccia into 4 wedges; split each wedge horizontally. Spoon one-fourth of vegetable mixture onto each bottom half; sprinkle with basil cheese. Top with tomatoes and tops of bread wedges.


    Final Comments


    Makes 4 sandwiches.

    Variation: Heat oven to 350 degrees. Place uncut focaccia on oven rack. Bake 5 to 7 minutes or until warm.
