    While kids may prefer ketchup, chipotle mayo is not to be missed. The pineapple relish is good enough to eat by the spoonful.


    List of Ingredients


    • 1/4 cup olive oil
    • Juice of 1/2 lime
    • Salt and pepper to taste
    • 4 thick 5- to 7-ounce bun-size fresh filets of cod, halibut or mahi-mahi
    • 4 potato hamburger buns
    • Chipotle mayo (look in sauces)
    • Pineapple relish (look in jam and jellies)


    Instructions


    1. In a small bowl, whisk together the olive oil and lime juice and season with salt and pepper. Pour the marinade over the fish and allow it to marinate for 10 minutes.

    2. On a hot grill, grill the fish approximately 4 to 6 minutes per side until the flesh is opaque and flaky. (You can also cook the fish in a grill pan on the stove or sauté it in olive oil over medium-high heat, 3 minutes per side until just browned. Reduce heat to low, cover and cook for 3 minutes until opaque and flaky.) Toast the buns.

    3. Serve fish on toasted buns with chipotle mayonnaise and/or pineapple relish.
