    Gingered Cranberry-Kumquat Relish

    Recipe Introduction


    This intensely colorful relish is the perfect accompaniment for roast turkey. It sweet-tart taste is enhanced by the bright bite of ginger.


    List of Ingredients


    • 1 cup fresh cranberries
    • 3 kumquats, quartered*
    • 1/4 cup sugar
    • 1 T chopped crystallized ginger


    Instructions


    1. Place all ingredients in food processor; pulse until finely chopped. Place in small bowl.
    2. Refrigerate at least 2 hours or overnight.


    Final Comments


    Makes 3/4 cup

    *If kumquats are unavailable, substitute 1/4 cup chopped orange.
