    List of Ingredients


    • 2 cups lightly packed fresh basil leaves, rinsed and dried
    • 2 garlic cloves
    • 1/2 tsp salt
    • 1/2 cup grated Parmigiano-Reggiano cheese
    • 2 T pine nuts or walnuts
    • 2/3 cup olive oil
    • 1 T butter, softened


    Instructions


    1. In a food processor, combine the basil leaves, garlic cloves, salt, grated cheese, and pine nuts. Process until chopped and combined. With the machine running, slowly pour in the olive oil and blend until smooth and the bright green, with flects of the darker basil, scraping down the sides of the bowl occasionally. If pesto is too thick, add a bit more olive oil, but no more than 3/4 cup total.
    2. Add the butter and blend until incorporated. Taste for salt and adjust if necessary.


    Final Comments


    Makes about 1 1/2 cups.
