    Recipe Introduction


    Tzatsiki (tsah TSEE kee), similar to the Indian raita, is a cooling garlic-yogurt dip, often served as a foil to spicy foods. It can also be used as a salad dressing or drizzled over grilled meats.


    List of Ingredients


    • 2 medium cucumbers, peeled and halved lengthwise
    • 1 tsp salt
    • 1 1/2 T white wine vinegar
    • 1 T olive oil
    • 2 cloves garlic, crushed
    • 2 cups plain nonfat yogurt


    Instructions


    1. Scrape out centers of cucumbers; discarding seeds. Coarsely grate cucumber into a colander and sprinkle with salt; allow to drain 30 minutes.
    2. Meanwhile, combine white wine vinegar, oil and garlic in a medium bowl. Allow to marinate while cucumbers drain.
    3. Squeeze cucumbers as dry as possible and blot on paper towels. Transfer to bowl with garlic mixture; add plain yogurt and stir.
    4. Use as a spread, dip or sandwich topping.
