    Use this finely ground mix as a rub for roasted meats or sprinkled onto rice and beans.


    List of Ingredients


    • 36 dried de Arbol chiles, broken into thirds, seeds removed
    • 12 dried pasilla chiles, seeded and broken into 1/2" pieces
    • 2 tsps coriander seeds
    • 1 tsp cumin seeds
    • 4 sticks cinnamon, crushed


    Instructions


    1. Place all ingredients in a bowl and toss to combine.
    2. Store in an airtight container for up to 1 year.


    Final Comments


    Yields: about 2 1/4 cups
