    Recipe Introduction


    If you prefer, serve this mildly spicy chili with cool ranch dressing.


    List of Ingredients


    • 1 T canola oil
    • 2 ribs celery, diced
    • 1 large green pepper, diced
    • 2 cloves garlic, minced
    • 2 lbs boneless, skinless chicken thighs,c ut into 1" pieces
    • 1 pkg (1.6 oz) Buffalo wings seasoning mix
    • 1 can (14 oz) diced tomatoes with mild green chilies
    • 1 can (6 oz) tomato paste
    • 1 can (19 oz) red kidney beans, rinsed and drained
    • 2 tsp Frank's RedHot Sauce
    • 1 cup chopped fresh cilantro
    • Bottled blue cheese salad dressing, optional


    Instructions


    1. In large pot, heat oil over medium heat. Add celery, green pepper and garlic. Cook until softened, about 5 minutes. Add chicken and seasoning; cook, stirring occasionally, until chicken is slightly browned, about 5 minutes.
    2. Add tomatoes with juice, paste, beans and hot sauce. Bring to boil; cover. Over low heat, simmer until chicken is cooked through, 20 minutes. Stir in 2/3 cup cilantro. If desired, serve with dressing. Sprinkle with remaining cilantro.
