Fiesta Chili

List of Ingredients
- 2 pounds lean beef chuck -- cubed
- 1/2 cup flour
- 2 tablespoons chili powder
- 1 teaspoon cumin
- 2 teaspoons salt
- 1/4 teaspoon pepper
- 1 tablespoon olive oil
- 1 onion -- chopped
- 2 cloves fresh garlic
- 2 cans red kidney beans
- 2 cans peeled tomatoes
- 1 teaspoon sugar
- 1/2 cup beer
- 1 can whole kernel corn
- 2 tablespoons butter
- 2 cups cooked rice
- 1 cup sour cream
- 1 cup monterey jack cheese -- shredded
- 1 cup cheddar cheese -- shredded
- 4 ounces chilies -- optional
Instructions
- Shake beef cubes with flour, chili powder, cumin, salt and pepper in a bag to coat well. Brown meat in olive oil, slowly adding in onion and garlic. Strain out any excess dripping; add rest of flour mixture to pot.
- Drain liquid from kidney beans and add to beef mixture; stir in tomatoes, sugar and beer; cover. Simmer, stirring several times, approx. 1 1/2
hours, or until beef is tender.
- Stir in kidney beans; heat until boiling.
- Heat corn separately with butter. When heated, add corn to mixture.
- Serve chili with rice on the side, so guests can spoon mixture over rice. Top with sour cream, cheese and fresh chilies.
