    • 2 pounds lean beef chuck -- cubed
    • 1/2 cup flour
    • 2 tablespoons chili powder
    • 1 teaspoon cumin
    • 2 teaspoons salt
    • 1/4 teaspoon pepper
    • 1 tablespoon olive oil
    • 1 onion -- chopped
    • 2 cloves fresh garlic
    • 2 cans red kidney beans
    • 2 cans peeled tomatoes
    • 1 teaspoon sugar
    • 1/2 cup beer
    • 1 can whole kernel corn
    • 2 tablespoons butter
    • 2 cups cooked rice
    • 1 cup sour cream
    • 1 cup monterey jack cheese -- shredded
    • 1 cup cheddar cheese -- shredded
    • 4 ounces chilies -- optional


    Instructions


    1. Shake beef cubes with flour, chili powder, cumin, salt and pepper in a bag to coat well. Brown meat in olive oil, slowly adding in onion and garlic. Strain out any excess dripping; add rest of flour mixture to pot.

    2. Drain liquid from kidney beans and add to beef mixture; stir in tomatoes, sugar and beer; cover. Simmer, stirring several times, approx. 1 1/2
      hours, or until beef is tender.
    3. Stir in kidney beans; heat until boiling.
    4. Heat corn separately with butter. When heated, add corn to mixture.

    5. Serve chili with rice on the side, so guests can spoon mixture over rice. Top with sour cream, cheese and fresh chilies.
