    Kale is one of those incredibly healthful vegetables (rich in vitamin C, beta carotene, vitamin B6, and phytonutrients) that we could all do well to eat more of. Here's a perfect way to sneak it in.


    List of Ingredients


    • 1 large bunch kale
    • 1 T olive oil
    • 1 medium onion, chopped
    • 1 large carrot, peeled and chopped
    • 1 stalk celery, chopped
    • 2 cloves garlic, minced
    • 1 cup tomato puree
    • 2 T tomato paste
    • 6 cups water
    • one 2-inch piece parmesan rind
    • salt and crushed red pepper


    Instructions


    1. Wash the kale well. Remove the leaves from the stems and tear the leaves into medium-size pieces. Set aside.
    2. Place a large nonstick pan over medium-high heat and add the olive oil. Add the onion and cook for about 5 minutes, until softened. Add the carrot, celery, and garlic, and cook for 5 minutes longer, stirring often.
    3. Stir in the tomato puree, tomato paste, and the water. Bring to a boil. Add the parmesan rind and kale. Reduce the heat and simmer for 30 minutes. Remove the parmesan rind. Season the soup with salt and red pepper flakes.
