    List of Ingredients


    • 3 T. butter
    • 1 1/2 lbs. sliced leeks
    • 1 1/2 lbs. peeled and diced potatoes
    • 1 qt. chicken broth
    • 1/2 c. cream
    • freshly ground white pepper
    • California Chives


    Instructions


    1. Soften leeks and potatoes in butter in a large heavy pan over moderate heat for 10 minutes, stirring 3 times.
    2. Add broth. Cook until vegetables are tender.
    3. Purée. Return to pot and heat with cream. Season to taste. Serve topped with California Chives.
