    Potato and Cheese Soup

    List of Ingredients


    • 8 cups potatoes, peeled and cubed
    • 2 cups chopped onion
    • 4 cups chopped celery
    • 2 teaspoons salt
    • 4 cups water
    • 4 cups half-and-half
    • 6 tablespoons butter
    • 1 cup shredded sharp cheddar cheese


    Instructions


    1. In a large pot, place potatoes, onions, celery and salt in the 4 cups of water. Simmer about 15 minutes until vegetables are tender.
    2. Put in a food processor or blender and purée until chunky.
    3. Return soup to pot and add the half-and-half, butter, and cheese. Simmer, making sure not to boil, until hot.
