Roasted Red Pepper Soup

- 1 medium yellow onion, chopped
- 2 T light olive oil
- 1 (13 oz) jar roasted sweet peppers
- 1 (14.5 oz) can diced tomatoes with basil, oregano & garlic
- 1 1/2 cups chicken broth
- salt and pepper, to taste
- sour cream, for garnish
- lemon zest, for garnish
Instructions
- In medium saucepan, over medium-high heat, cook onion in oil until onion is softened, about 3 minutes.
- Add roasted sweet peppers, tomatoes, and chicken broth. Bring mixture to a boil; reduce heat and simmer 15 minutes.
- Remove soup from heat and cool slightly. Pour the soup into a food processor (half at a time, if necessary). Cover and blend or process until smooth.
- Season with salt and pepper. Ladle into bowls and garnish.
