    Roasted Red Pepper Soup

    List of Ingredients


    • 1 medium yellow onion, chopped
    • 2 T light olive oil
    • 1 (13 oz) jar roasted sweet peppers
    • 1 (14.5 oz) can diced tomatoes with basil, oregano & garlic
    • 1 1/2 cups chicken broth
    • salt and pepper, to taste
    • sour cream, for garnish
    • lemon zest, for garnish


    Instructions


    1. In medium saucepan, over medium-high heat, cook onion in oil until onion is softened, about 3 minutes.
    2. Add roasted sweet peppers, tomatoes, and chicken broth. Bring mixture to a boil; reduce heat and simmer 15 minutes.
    3. Remove soup from heat and cool slightly. Pour the soup into a food processor (half at a time, if necessary). Cover and blend or process until smooth.
    4. Season with salt and pepper. Ladle into bowls and garnish.
