    List of Ingredients


    • 1 quart beef broth
    • 1 quart water
    • 1 onion, cut into eighths
    • 1 bay leaf
    • 1 lb ground beef
    • 1/2 cup long-grain rice
    • 1 large egg
    • 2 tsp dried oregano
    • 2 tsp garlic salt
    • 1/2 tsp black pepper, freshly ground
    • 1/4 tsp ground cumin
    • 1/2 cup all-purpose flour
    • 3 large potatoes, diced


    Instructions


    1. Combine broth and water in a large stockpot. Add onion and bay leaf. Bring to a boil over high heat.
    2. Meanwhile, in a large mixing bowl, combine ground beef, rice, egg, oregano, garlic salt, pepper, and cumin. Shape into 1" meatballs.
    3. Coat meatballs with flour. Drop into boiling broth; cover. Reduce heat to low. Cook, stirring frequently, for 45 minutes.
    4. Add potatoes, to the soup; cover partially. Cook, stirring occasionally, until potatoes are tender and soup is slightly thickened, 35 to 50 minutes. Remove bay leaf. Season with more pepper, if needed.
