    List of Ingredients


    • 1 can (15.5 oz) chickpeas
    • 1 T garlic-flavored olive oil, like Colavita
    • 2 cans (14.5 oz each) chicken broth
    • 1 pkg (13 oz) cheese tortellini
    • 1 cup chopped arugula
    • parmesan cheese, shredded


    Instructions


    1. In saucepot over high heat, cook rinsed and drained chickpeas in hot olive oil for 1 minutes.
    2. Add chicken broth and bring mixture to a boil.
    3. Add tortellini to broth. Cook tortellini in soup according to package directions. Stir in arugula. Cook 1 minute. Serve with cheese on top of each individual serving.
