    • 1 pound bacon
    • 1 onion, chopped
    • 8 eggs, lightly beaten
    • 1 pound potatoes, shredded
    • 2-3/4 cups shredded Cheddar cheese
    • 1/8 teaspoon pepper


    Instructions


    1. Preheat oven to 350°F. Spray a 13x9-inch baking pan with non-stick vegetable spray.

    2. In a large skillet, cook bacon until crisp; remove and crumble. Add onion to drippings; cook until lightly browned. Remove from skillet.
    3. In a large mixing bowl, combine eggs, potatoes, cheese, crumbled bacon, eggs, and pepper; gently mix until well combined. Pour into prepared baking pan.
    4. Bake for 45 minutes or until center is set. Cut into squares.
