BROCCOLI AND BLUE CHEESE IN PUFF PASTRY

- 4 eggs
- 1/8 teaspoon pepper
- 1/8 teaspoon ground nutmeg
- 1 pound ricotta cheese
- 8 ounces blue cheese, crumbled
- 4 cups cooked, chopped broccoli flowerets
- 1 sheet frozen puff pastry, thawed
Instructions
- Preheat oven to 400°F. Grease a 9-inch deep-dish pie plate with butter.
- In a large bowl, beat eggs until light. Add cheeses, pepper, and nutmeg; stir until well mixed. Stir in broccoli. Set aside.
- On a lightly floured board, roll out pastry into a 12-inch circle. Line prepared pie plate; trim and flute edges. Pour the broccoli mixture into prepared crust.
- Bake for 30 minutes. Serve warm.
