BROCCOLI RABE WITH SAUSAGE AND POTATOES

- 3/4 pound sweet Italian sausage, sliced into 1-inch rounds
- 2 large onions
- 1-1/4 pounds small red potatoes
- 1 cup chicken broth
- 2 cloves garlic, thinly sliced
- 1/8 teaspoon cayenne pepper
- 1/2 teaspoon salt
- 1 pound broccoli rabe
Instructions
- In a large skillet, cook, stirring occasionally, sausage 5 to 7 minutes until browned on all sides.
- Cut onions in half lengthwise; slice crosswise. Add to the skillet, stirring gently to coat with sausage drippings; cook for 5 minutes.
- Slice potatoes into thin rounds. Add to onions. Add chicken broth, garlic, cayenne, and salt; stir gently. Cover; cook, stirring occasionally, for 12 minutes.
- Trim woody part of stem from broccoli rabe. Cut remaining stem, leaf and florets into 1-inch pieces. Gently stir into skillet. Simmer 1 to 2 minutes or until crisp-tender.
