    Baked Acorn Squash

    List of Ingredients


    • 2 medium acorn squash
    • 1/2 cup butter
    • 1/2 cup brown sugar, firmly packed
    • ground cinnamon
    • ground nutmeg


    Instructions


    1. Preheat oven to 350 degrees. Carefully cut the squash in half, then in quarters, forming eight boat shaped wedges. Scoop out the seeds.
    2. Place the squash, cut side up, in a shallow 9x13-inch baking dish. In the center of each, place 1 T of butter, 1 T brown sugar, a generous sprinkling of cinnamon, and a dash of nutmeg.
    3. Add 1/2" of hot water to the baking dish, taking care not to get any in the squash cavity. Bake for about 1 hour, or until the squash is soft and nicely browned. Drizzle pan juice on top before serving.
