    Baked Potatoes with Pesto Butter

    List of Ingredients


    • 4 (8 oz) baking potatoes, scrubbed
    • 1/4 cup (1/2 stick) butter, softened
    • 2 T finely chopped fresh basil leaves
    • 1 T grated Parmesan cheese
    • 1 clove garlic, minced


    Instructions


    1. Preheat oven to 425 degrees. Pierce each potato once with the tip of a knife and place directly on oven rack.
    2. Bake until tender - about 1 hour.
    3. Meanwhile, stir together butter, basil, cheese, and garlic in a small bowl. Spoon Pesto Butter out onto a piece of wax paper and shape into a log. Wrap and refrigerate until ready to use.
    4. To serve, cut butter into 4 pieces. Cut an X in each potato; squeeze sides of potato to open and insert a piece of Pesto Butter. Serve hot.
