    Black Bean-Corn Salsa


    List of Ingredients


    • 3 ears white corn
    • 3/4 cup water
    • 3 medium tomatoes
    • 2 jalapeno peppers
    • 2 (15 oz) cans black beans, rinsed and drained
    • 1 cup chopped fresh cilantro
    • 1/3 cup fresh lime juice
    • 1/4 tsp salt
    • 1/4 tsp pepper


    Instructions


    1. Cut corn from cobe into saucepan; add 3/4 cup water, and bring to boil. Cover, reduce heat, and simmer 6 to 7 minutes or until tender. Drain corn; transfer to a large bowl.
    2. Peel, seed, and finely chop tomatoes; add to corn. Seed and mince peppers; add to corn with beans and next 4 ingredients, stirring gently.
    3. Chill. Serve with tortilla chips.


    Final Comments


    Yield: 8 cups
