Black Bean-Corn Salsa
List of Ingredients
- 3 ears white corn
- 3/4 cup water
- 3 medium tomatoes
- 2 jalapeno peppers
- 2 (15 oz) cans black beans, rinsed and drained
- 1 cup chopped fresh cilantro
- 1/3 cup fresh lime juice
- 1/4 tsp salt
- 1/4 tsp pepper
Instructions
- Cut corn from cobe into saucepan; add 3/4 cup water, and bring to boil. Cover, reduce heat, and simmer 6 to 7 minutes or until tender. Drain corn; transfer to a large bowl.
- Peel, seed, and finely chop tomatoes; add to corn. Seed and mince peppers; add to corn with beans and next 4 ingredients, stirring gently.
- Chill. Serve with tortilla chips.
