List of Ingredients



• 1 eggplant
  
• 1/2 cup butter or margarine, melted
  
• 1/4 cup grated onion
  
• 2 cloves garlic, minced
  
• 2 cups shredded Cheddar cheese
  






Instructions



1. Preheat broiler.
   
2. Peel and quarter eggplant lengthwise; cut into small wedges. Place on an UNGREASED baking sheet.
   
3. In a small bowl, combine butter, onion, and garlic; brush over eggplant sticks.
   
   
4. Broil 5 minutes; turn and brush with butter mixture. Broil 5 minutes. Sprinkle with cheese and broil until cheese melts. Serve immediately.
