    Caramelized Roasted Squash

    List of Ingredients


    • 2 large butternut squash, peeled, seeded and cubed into 1-inch pieces (about 8 cups)
    • Salt and pepper to taste
    • 4 cloves Peeled Garlic, crushed
    • 2 Tbsp Vegetable Oil
    • 4 Tbsp (1/2 stick) Butter, cut into Tbsp size pieces
    • 2 Tbsp maple syrup


    Instructions


    1. Preheat oven to 450 degrees.
    2. Toss squash and garlic in large bowl with oil until well coated. Season with salt and pepper. Arrange in single layer on large baking dish.

    3. Roast on center rack 10 min. Remove pan from oven. Dot squash mixture with butter; drizzle with syrup. Carefully turn squash with spatula. Return to oven; roast 15-20 min until tender and lightly browned.

    SERVES 8

    Chef Tip(s):
    Crush by placing clove of garlic in center of cutting board. Carefully hit clove sharply with flat edge of your chef's knife.
