    List of Ingredients


    • 1 medium-size head of cauliflower
    • 2 cups milk
    • 1/2 teaspoon salt
    • 1 egg
    • 1/2 cup cheese (Gruyere, Swiss, Jarlsberg, Comte, Parmesan or Pecorino, or mixture of 2)
    • l Tbsp. butter
    • Salt and pepper


    Instructions


    1. Trim cauliflower, separate florets and cook in milk and 1/2 teaspoon salt until tender (10-15 minutes). Drain, reserving 1/3 cup of milk.
    2. Arrange cooked florets in lightly buttered baking dish. In bowl, beat together egg and reserved milk. Add grated cheese. Spread over florets. Add salt and freshly ground pepper. Dot with butter.
    3. Broil gratin until browned and bubbly. Serve hot.
