Country Style Creamed Spinach

- four 10-oz pkgs frozen chopped spinach
- 2 T butter
- 1 medium shallot, minced (1/4 cup)
- 1 tsp salt
- 1/8 tsp ground black pepper
- pinch ground nutmeg
- 1 cup heavy cream
Instructions
- Thaw spinach in microwave according to package directions. Drain well, reserving 1/2 cup spinach liquid.
- Meanwhile, in a nonstick 12-inch skillet, melt butter over medium-low heat. Add shallot and saute until tender, about 10 minutes, stirring frequently.
- Increase heat to medium; add spinach, reserved spinach liquid, salt, pepper and nutmeg; cook, stirring occasionally, 5 minutes, or until spinach is tender. Raise heat to medium-high. Stir in cream and bring to a boil; cook 3 to 5 minutes, until cream is slightly thickened. Transfer to a bowl to serve.
