    Creamy Cheesy Mashed Potatoes

    Recipe Introduction


    Beef up your mashed potatoes with evaporated milk and shredded cheddar cheese! Add green onions and crumbled bacon for an even heartier side dish.


    List of Ingredients


    • 2 medium (about 2 lbs total) potatoes, peeled and cut into 1" chunks
    • 3/4 cup evaporated milk
    • 1/4 cup butter
    • 1 cup shredded cheddar cheese


    Instructions


    1. Place potatoes in large saucepan. Cover with water; bring to a boil. Cook over medium-high heat for 15 to 20 minutes or until tender; drain.
    2. Return potatoes to saucepan; add evaporated milk and butter. Beat with hand-held mixer until smooth. Stir in cheese. Season with salt and ground black pepper.
    3. Note: Chopped green onions, chopped parsley or cooked, crumbled bacon may be added to mashed potatoes.
