Creamy Chive Potatoes

- 5 lbs russet potatoes, peeled and quartered
- 1/2 cup butter
- 1 (8 oz) container sour cream
- 1/4 to 1/2 cup whipping cream
- 3 T minced fresh chives
- 1 1/2 tsp salt
- 1 tsp onion powder
- 1/2 tsp pepper
Instructions
- Cook potato in a Duth oven in boiling water to cover 25 minutes or until tender; drain.
- Add butter and remaining ingredients to potato; mash with a potato masher until mixture is smooth.
Final Comments
Yield: 8 servings
NOTE: These can be made ahead and refrigerated. To reheat, cook over low heat, stirring in additional whipping cream, if needed.
