    Creamy Chive Potatoes

    List of Ingredients


    • 5 lbs russet potatoes, peeled and quartered
    • 1/2 cup butter
    • 1 (8 oz) container sour cream
    • 1/4 to 1/2 cup whipping cream
    • 3 T minced fresh chives
    • 1 1/2 tsp salt
    • 1 tsp onion powder
    • 1/2 tsp pepper


    Instructions


    1. Cook potato in a Duth oven in boiling water to cover 25 minutes or until tender; drain.
    2. Add butter and remaining ingredients to potato; mash with a potato masher until mixture is smooth.


    Final Comments


    Yield: 8 servings

    NOTE: These can be made ahead and refrigerated. To reheat, cook over low heat, stirring in additional whipping cream, if needed.
