    List of Ingredients


    • 1 T extra-virgin olive oil
    • 1 large onion, chopped
    • 1 green bell pepper, chopped
    • 1 jalapeno pepper, seeded and chopped
    • 2 cloves garlic, minced
    • 2 lbs fresh or frozen crowder or black-eyed peas
    • 1 smoked turkey thigh or leg
    • 1 bay leaf
    • 1 cup chicken broth
    • 1 cup water
    • salt and freshly ground pepper


    Instructions


    1. Heat olive oil in a large saucepan over medium heat. Add onion, bell pepper, jalapeno and garlic and cook, stirring until soft.
    2. Add peas, turkey, bay leaf, broth and water, and bring to a boil. Partially cover and lower heat; simmer 1 hour, or until peas are tender.
    3. Remove turkey to a cutting board and discard bone. Dice meat and return to saucepan. Taste peas and season with salt and pepper to taste.
