Eggplant Patties
List of Ingredients
- 1 eggplant, peeled, diced
- 1 1/4 cups crackers, crushed
- 1 1/4 cups colby cheese, grated
- 2 eggs
- 2 T fresh parsley, chopped
- 2 T green onions, sliced
- 1 garlic clove, crushed
- 1/2 tsp salt
- 1/8 tsp pepper
- 2 T oil
Instructions
- In saucepan cook eggplant in boiling water until tender; about 5 minutes. Drain and mash.
- Stir in crushed crackers, colby cheese, eggs, parsley, green onions, garlic, salt and pepper. Shape into 8 patties, about 3" in diameter. Heat oil in skillet and cook patties over medium heat for about 3 minutes on each side; or until golden brown.
