    List of Ingredients


    • 4 lbs assorted greens, such as collards, mustard or kale
    • 2 T extra-virgin olive oil
    • 1 large onion, chopped
    • 1 green bell pepper, chopped
    • 2 cloves garlic, minced
    • 1 stalk celery, chopped
    • 1 jalapeno pepper, seeded and minced
    • 4 pieces turkey bacon, cut into strips
    • 2 cups chicken stock
    • salt and freshly ground black pepper
    • pinch sugar, optional


    Instructions


    1. Stem and coarsely chop greens. Wash thoroughly and spin-dry in batches in salad spinner.
    2. In large pot over medium heat, add olive oil, onion, bell pepper, garlic, celery, jalapeno and turkey bacon. Saute until vegetables are soft, about 10 minutes. Add greens a handful at a time, stirring them down and adding more as they wilt.
    3. When all greens are wilted, add chicken stock, salt and pepper to taste and, if desired, a pinch of sugar. Once greens come to a boil, turn down the heat to low. Simmer greens, stirring occasionally for 1 hour, or until they reach desired tenderness.
