List of Ingredients
- 4 lbs assorted greens, such as collards, mustard or kale
- 2 T extra-virgin olive oil
- 1 large onion, chopped
- 1 green bell pepper, chopped
- 2 cloves garlic, minced
- 1 stalk celery, chopped
- 1 jalapeno pepper, seeded and minced
- 4 pieces turkey bacon, cut into strips
- 2 cups chicken stock
- salt and freshly ground black pepper
- pinch sugar, optional
Instructions
- Stem and coarsely chop greens. Wash thoroughly and spin-dry in batches in salad spinner.
- In large pot over medium heat, add olive oil, onion, bell pepper, garlic, celery, jalapeno and turkey bacon. Saute until vegetables are soft, about 10 minutes. Add greens a handful at a time, stirring them down and adding more as they wilt.
- When all greens are wilted, add chicken stock, salt and pepper to taste and, if desired, a pinch of sugar. Once greens come to a boil, turn down the heat to low. Simmer greens, stirring occasionally for 1 hour, or until they reach desired tenderness.
