Hearty Baked Mashed Potatoes

Recipe Introduction
Rich and flavorful, this is a nice change from regular mashed potatoes and a tasty, quick side dish to serve when you are expecting company or just want to add a little something special to a weeknight supper.
List of Ingredients
- 8 medium potatoes, peeled and cubed
- 8 oz cream cheese, softened
- 1 cup sour cream
- 5 T butter, divided
- 1/3 cup chopped fresh chives
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp paprika
Instructions
- Preheat oven to 400 degrees. Grease a 2 quart baking dish.
- Combine potatoes with enough water to cover in a saucepan. Bring to a boil. Boil until tender, 12 to 15 minutes. Drain, reserving 2 T of the liquid.
- Combine potatoes, reserved liquid, cream cheese, sour cream, 4 T butter, chives, salt and black pepper in a large bowl. Beat until smooth.
- Spoon into prepared baking dish. Dot with remaining butter. Sprinkle with paprika. Bake for 8 minutes.
