    Hearty Baked Mashed Potatoes

    Recipe Introduction


    Rich and flavorful, this is a nice change from regular mashed potatoes and a tasty, quick side dish to serve when you are expecting company or just want to add a little something special to a weeknight supper.


    List of Ingredients


    • 8 medium potatoes, peeled and cubed
    • 8 oz cream cheese, softened
    • 1 cup sour cream
    • 5 T butter, divided
    • 1/3 cup chopped fresh chives
    • 1/2 tsp salt
    • 1/4 tsp black pepper
    • 1/4 tsp paprika


    Instructions


    1. Preheat oven to 400 degrees. Grease a 2 quart baking dish.
    2. Combine potatoes with enough water to cover in a saucepan. Bring to a boil. Boil until tender, 12 to 15 minutes. Drain, reserving 2 T of the liquid.
    3. Combine potatoes, reserved liquid, cream cheese, sour cream, 4 T butter, chives, salt and black pepper in a large bowl. Beat until smooth.
    4. Spoon into prepared baking dish. Dot with remaining butter. Sprinkle with paprika. Bake for 8 minutes.
