Herbed New Potatoes

- 24 tiny new potatoes
- 2 T olive oil
- 1 T balsamic vinegar
- 1 T chopped fresh rosemary
- 1 T chopped fresh thyme
- coarse salt or sea salt
- freshly ground black pepper
Instructions
- Preheat oven to 425 degrees.
- Wash potatoes; pat dry. Place potatoes in a 3 quart saucepan and cover with water. Bring to a boil; cook over medium heat about 10 minutes or until slightly tender.
- In a roasting pan combine potatoes, oil, vinegar, rosemary, thyme, and salt and pepper to taste. Toss to coat.
- Roast about 20 minutes or until tender and golden brown, stirring once or twice.
