Recipe Introduction
Make sure when you cut up the broccoli you make them into bite sized pieces- this allows the cheese and olive oil to mix nicely with the vegetable. Look for fresh and ripe broccoli- if it is pale green and the buds have flowered pass on it, it's too old. Look for bright green broccoli with tight buds.
List of Ingredients
- 2 large stalks of fresh broccoli
- 3 tablespoons of olive oil
- 3 cloves of garlic, mined
- 1/4 -1/2 cup of grated Parmesan cheese
Instructions
- In a large Dutch oven either steam (until the broccoli is bright green) the broccoli pieces using a steaming basket or place the broccoli pieces in a Dutch oven filled with boiling salted water and allow to cook for 2 minutes, until broccoli is bright green. Remove and place in large serving
bowl.
- In a small frying pan place olive oil and heat using medium- low heat. Add garlic and gently cook for 3 -5 minutes. You don't want the garlic to become brown.
- Add the olive oil and garlic to the broccoli in the bowl and toss to coat the vegetable. Add the cheese and again toss to coat. Serve.
