    Recipe Introduction


    Make sure when you cut up the broccoli you make them into bite sized pieces- this allows the cheese and olive oil to mix nicely with the vegetable. Look for fresh and ripe broccoli- if it is pale green and the buds have flowered pass on it, it's too old. Look for bright green broccoli with tight buds.


    List of Ingredients


    • 2 large stalks of fresh broccoli
    • 3 tablespoons of olive oil
    • 3 cloves of garlic, mined
    • 1/4 -1/2 cup of grated Parmesan cheese


    Instructions


    1. In a large Dutch oven either steam (until the broccoli is bright green) the broccoli pieces using a steaming basket or place the broccoli pieces in a Dutch oven filled with boiling salted water and allow to cook for 2 minutes, until broccoli is bright green. Remove and place in large serving
      bowl.
    2. In a small frying pan place olive oil and heat using medium- low heat. Add garlic and gently cook for 3 -5 minutes. You don't want the garlic to become brown.
    3. Add the olive oil and garlic to the broccoli in the bowl and toss to coat the vegetable. Add the cheese and again toss to coat. Serve.
