    New Potatoes with Lemon Butter Sauce

    List of Ingredients


    • 3 lbs small new potatoes
    • 1/2 cup butter
    • 1/4 cup olive oil
    • 3 T minced fresh chives
    • 2 T minced fresh parsley
    • 1 T grated lemon rind
    • 6 T lemon juice
    • 1/2 tsp salt
    • 1/2 tsp pepper
    • 1/4 tsp ground nutmeg


    Instructions


    1. Peel each potato, leaving 1 1/2" band of peel around middle.
    2. Cook potatoes in a Dutch oven in boiling water to cover 20 minutes or until tender; drain. Place in a large bowl.
    3. Bring butter and next 8 ingredients to a boil in a saucepan over medium heat. Remove from heat. Drizzle over potatoes, tossing to coat.
