    Oven-Roasted Smashed Potatoes

    Recipe Introduction


    A baby or new potato is a young potato of any variety which hasn't yet fully developed its starch. This translates into a waxier texture that's perfect for roasting.


    List of Ingredients


    • 2 (24 oz) pkgs baby Yukon gold potatoes
    • 1 medium-size sweet onion, cut into 1/2-inch pieces
    • 1 T olive oil
    • 1 tsp chopped fresh rosemary
    • 1 tsp kosher salt
    • 2 tsp fresh lemon juice
    • 1/4 tsp dried crushed red pepper


    Instructions


    1. Preheat oven to 400.
    2. Toss together all ingredients in a broiler pan until well coated.
    3. Bake 40 minutes or until tender and browned.
    4. Gently smash potatoes with a fork.
