Oven-Roasted Smashed Potatoes

Recipe Introduction
A baby or new potato is a young potato of any variety which hasn't yet fully developed its starch. This translates into a waxier texture that's perfect for roasting.
List of Ingredients
- 2 (24 oz) pkgs baby Yukon gold potatoes
- 1 medium-size sweet onion, cut into 1/2-inch pieces
- 1 T olive oil
- 1 tsp chopped fresh rosemary
- 1 tsp kosher salt
- 2 tsp fresh lemon juice
- 1/4 tsp dried crushed red pepper
Instructions
- Preheat oven to 400.
- Toss together all ingredients in a broiler pan until well coated.
- Bake 40 minutes or until tender and browned.
- Gently smash potatoes with a fork.
