Potato Mushroom Gratin

List of Ingredients
- 1 T unsalted butter
- 8 oz small mushrooms, preferably cremini, quartered
- 2 large eggs
- 3/4 cup milk
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 lb cooked small white new potatoes, peeled and quartered
- 4 oz swiss cheese, grated
Instructions
- Preheat oven to 375 degrees. Butter a shallow 1 1/2 quart casserole.
- Melt 1 T butter in a medium skillet over medium-high heat. Add mushrooms and cook for about 6 minutes. Remove from heat.
- Beat eggs, milk, salt and pepper in a bowl. Stir in mushrooms, potatoes and cheese.
- Place in casserole and bake for 35 to 45 minutes.
