    List of Ingredients


    • 1 T unsalted butter
    • 8 oz small mushrooms, preferably cremini, quartered
    • 2 large eggs
    • 3/4 cup milk
    • 1/2 tsp salt
    • 1/2 tsp black pepper
    • 1 lb cooked small white new potatoes, peeled and quartered
    • 4 oz swiss cheese, grated


    Instructions


    1. Preheat oven to 375 degrees. Butter a shallow 1 1/2 quart casserole.
    2. Melt 1 T butter in a medium skillet over medium-high heat. Add mushrooms and cook for about 6 minutes. Remove from heat.
    3. Beat eggs, milk, salt and pepper in a bowl. Stir in mushrooms, potatoes and cheese.
    4. Place in casserole and bake for 35 to 45 minutes.
